What to do about Co-Worker?? HELP?

I work as one of two legal assistants at a small law firm. I handle the court cases and grunt work while my co-worker is the "office manager" (a title she gave herself) and handles the check book and real estate issues. We make the same pay, but she has been there 9 months longer, but I have more education.

This is the problem: Although my boss has instructed her to teach me to do everything in the office since he is rarely there, but she refuses to. I have even asked her several times to let me help her with work, but she says "she barely has enough to do herself." I think that she is afraid I might replace her and is wanting me to be "naive" so she has job security.Although that is not my goal, I have two children and do need job security too! She is leaving for a trip to Peurto Rico in two weeks and I do not know enough to run the office efficiently? What do I do? No jokes please, only serious advice!
